An Urban Charter School Food Service

A Team to Tackle School Lunch

Kindergarten children eating lunchFresh Advantage was retained by a family foundation to assist an urban charter school to develop a self-operating food service for its faculty and students.  A high percentage of the students were eligible for reduced and free meals subsidies from the USDA School Lunch program.  After the successful launch of the school food service, the program was expanded to offer meals to employees of a co-located health care center.

Fresh Advantage assembled a team that included experienced school food consulting chefs and a dietitian, budget and systems management experts, and an architect.  The FA team supervised build out of the commercial kitchen, including expanded equipment and storage capacity; hiring and training staff; recipe and menu cycle development; supply chain and purveyor contracts; and marketing and education materials.  In addition, Fresh Advantage secured evaluation support from physicians and public health experts at a local academic medical center and worked with that team to secure grant funding for program evaluation.
